Chef Michael Goodman Creates Cooking Recipes for Salsa

While JoMomma’s takes great pride in creating its own fresh recipes for our salsa, we reached out to the very best chef in the Midwest to help create dishes beyond just the chips and salsa.  Chef Goodman has over 30 years of experience ranging from his own restaurants to global hospitality firms.   Here are a few of his favorites that have been met with rave reviews.

JoMomma’s Pineapple Mango

Warm Bacon Dressing

JoMomma’s Pineapple Mango Warm Bacon Dre

16 oz. JoMomma’s Pineapple Mango Salsa

12 fluid oz. Sprite

1/2 cup of Corn Syrup or Honey

1 pound of Cooked/Diced Bacon

Directions:

 

Combine salsa, Sprite and corn syrup in a sauce pan and simmer over low heat for 15-20 minutes.  While salsa is simmering, cook bacon until most crisp, drain fat thoroughly and chop in to 1/4” to 1/2” square pieces.  Add cooked bacon to salsa mixture and simmer an additional five minutes.  Remove from and hold until service, or, place in food storage container and refrigerate up to seven days.  This dressing can be used as an accompaniment to scrambled eggs, fish, shrimp, brie topping, grilled chicken, steak or whatever creation you desire.

Alfredo Pasta

2 tblspn. Butter

2 tblspn. Diced Onion

16 fluid oz. Heavy Cream

16 oz. JoMomma’s Hot Momma Salsa

1 cup Grated Parmesan

Directions:

 

Melt butter in a saucepan over medium heat and immediately add diced onion, cooking until onions soften.  Add heavy cream and salsa and simmer over low heat while stirring occasionally for 20 minutes.  Add grated parmesan cheese and simmer while stirring constantly for 3-5 more minutes.  Remove from heat and enjoy immediately with your favorite pasta or move to a storage container and store for up to 7 days.
